We are seeking aSous Chefto join our Executive Chef in preparing high quality foods for patients, employees, hospital visitors and special functions in accordance to standardized recipes. You will ensures that food is "batched cooked" in sufficient amounts per production sheets, to meet service schedules. Additional responsibilities include prepping daily production and assignment sheets; to include employee break schedule, and conducting quality checks according to department regulatory requirements.
Responsible for total coordination of food production.
Maintaining the highest standards in food presentation, production and consistency.
Retaining control procedures (i.e. labor and food costs, waste and security).
Supervise, train and develop staff.
Maintain sanitation levels in accordance with hotel and local health department regulations.
Maintain effective working relationship with other departments.
Involved in recommendations for hiring and coaching staff.
Supervise the preparation and presentation of foods by cooks and other pantry personnel, overseeing food items are prepared as determined by the Executive Chef.
Perform other related duties as assigned or requested by supervisors/managers.
Maintain an adequate supply of all food inventory.
Assist in maintaining adequate training programs for kitchen staff.
Ensure the best and fastest performance of the kitchen so as not to impede service in food outlets.
Kitchen always prepared to start service on time.
Ensure server orders are clearly understood so that “returns” due to faulty prep are minimized.
Ensure that requests and specifications in the function sheet are provided on a timely basis.
Constantly coordinate with room supervisors so production is scheduled as reservations dictate.
Practice safety standards and report any unsafe conditions.
Responsible for the closing or opening of the kitchen operation.
Is your background a fit?
Minimum 2-4 years experience in quality, high volume restaurant operation or hotel.
1 year supervisor experience preferred
Able to lift 50 lbs and work in warm environment.
Able to sit, stand, stoop or bend for duration.
New York City Food Handlers Permit.
Full time/open availability from Monday to Sunday
Schedule will vary but will include many mid to late shifts including some weekends and holidays
